Angel hair pasta with Pesto, Shrimp and Cherry Tomatoes!

  • Box of Angel hair pasta
  • Olive oil
  • Salt and pepper
  • 2lbs of Shrimp
  • 2 teaspoons minced garlic
  • Half a cup pesto
  • One cup halved cherry tomatoes
  • Parmesan cheese to sprinkle on top
  • One lemon for garnishing
Bring water to a boil & cook the pasta. Save 1 cup of the pasta water. Heat the olive oil, add the shrimp and cook for about one minute. Turn the shrimp over and add the garlic. Continue cooking for 1-2 more minutes. Add the reserved water from the pasta. and the pesto and stir to combine. Then add the pasta and the tomatoes to the shrimp pan. Season with salt and pepper and enjoy!
