Veggie/Turkey Chili!!!

Olive Oil
Garlic cloves 
Green Bell Pepper
Red bell pepper 
Yellow squash 
Lean Ground Beef or lean ground Turkey
Large can of peeled Tomato chunks in a can 
Small can of peeled tomatoes
1 jar pasta sauce 
1 can Pinto beans 
1 can kidney beans 
1 can corn 
Seasonings: Chili powder, oregano, cumin, salt and cayenne
Optional toppings : 
Sour Cream
Shredded Cheese
Tortilla Strips
Lime Wedges
Sauté and Cook Beef or Turkey In a large pan with olive oil over medium high heat. Add the onion, garlic & seasoning & sauté until almost cooked.
Chop up all vegetables. Then sauté them all together with a little olive oil to lightly soften. Once The vegetables are softened, add them to your turkey or beef mixture.
Add in can of peeled large tomatoes & can of small peeled tomatoes or diced tomatoes, pinto beans, kidney beans, I can of corn, chili powder, oregano, cumin, coriander, salt and cayenne. Cook on low and simmer all together for about 30 min. Top with any toppings you choose & enjoy!
